Ingredients

  • 115 grams unsalted butter (softened)

  • 160 grams Light Brown Sugar

  • 40 grams Caster Sugar

  • 1 Egg

  • 2 tsp Vanilla Extract

  • 315 grams Plain Flour

  • 1/2 tsp Baking Powder

  • 1/4 tsp Bicarbonate of Soda

  • 1/4 tsp Fine Salt

  • 125 grams Chocolate Chips

Method

Making chunky chocolate chip cookies is the perfect excuse to slow down and enjoy a cozy day in the kitchen. They’re simple to make. Take your time, have fun with it, and be generous with the chocolate. In the end, you’ll have thick, gooey, chocolate-packed cookies that taste even better because you made them yourself.

Step 1:
Pre-heat your oven to 180°C. Add 115g of unsalted butter to a bowl or stand mixer and begin whisking to soften it. It is best to use butter that has already been softened, but if you have not, simply allow your mixer an extra minute or so to help it along.

Once the butter starts to look slightly creamy, keep it mixing and add in 160g of light brown sugar, followed by 40g of caster sugar. Continue mixing for about 2 minutes. It may take a little longer if you are mixing by hand.

You will know it is ready when the mixture looks lighter in colour and soft and fluffy. It should look smooth and creamy, with no visible streaks of butter or dry patches of sugar. If you rub a small amount between your fingers, it should feel soft and slightly grainy but evenly mixed.

Step 2:
Add 1 egg and 2 teaspoons of vanilla extract to your butter and sugar mixture. Mix for about a minute, until everything is fully combined.

The mixture will look softer and a little runny at this stage, and that is completely normal. It may even look slightly split for a moment, but keep mixing and it will come together into a smooth, glossy mixture.

Step 3:
Now it is time to prepare your dry ingredients. Sift 315g of plain flour into a separate bowl, then add your baking powder, bicarbonate of soda and salt.

Give everything a good mix to combine. This step simply makes sure your raising agents and salt are evenly distributed before adding them to the wet mixture.

Step 4:
Now you have your wet and dry ingredients ready, it is time to bring them together. Slowly add the dry mixture into the wet mixture. I like to add it one tablespoon at a time while my mixer runs on a low to medium speed.

If you are mixing by hand, divide the dry mixture into quarters and add it in stages. Mix until just combined. Once all the flour mixture has been added and no dry patches remain, remove the bowl from your mixer.

Step 5:
Now you have your cookie dough. Add 125g of chocolate chips, along with any other fillings you are using, and fold them in by hand. Mix until the chocolate chips are evenly distributed throughout the dough.

Step 6:
Line a baking tray with baking paper. I prefer this over greasing a tin for cookies. Grab an ice cream scoop, or a large spoon if you do not have one, and begin scooping the dough onto the tray.

If you want perfectly round cookies, you can roll each scoop into a neat ball. I prefer chunky, rustic cookies, so I simply scoop and place them straight onto the tray without shaping.

Continue until all of the dough is used. For large cookies, you may get around 6 to 8. For smaller ones, you could get between 10 and 14.

Place the tray into a preheated oven and bake for 12 to 14 minutes. Check them after 10 to 12 minutes. If the edges feel set and the cookies do not wobble when you gently shake the tray, they are ready. Remember they will continue to cook slightly once removed from the oven, so take them out a little earlier if you prefer them soft in the centre.

If you would like to add toppings such as chopped Kinder Bueno, press them gently into the tops of the cookies as soon as they come out of the oven. They will soften and settle into the warm cookie as it cools. Pop them in your cookie jar, or on your table and enjoy!
